Small batch Raspberry Jam

This is also a lower sugar option for my fellow diabetics out there…

Ingredients

  • 1 package of fresh raspberries
  • A heaping 1/3 cup of honey
  • 1 teaspoon Chia seeds (helps to thicken)

Combine your clean raspberries and heaping measurement of honey into a sauce pan. Top off with 1 tablespoon of water. Heat over low heat until warmed through and honey has a chance to thin out. Turn up to a full boil and allow to boil for about 4 minutes. As the mixture begins to boil, add the Chia seeds if using. (These will just help in thickening the jam. Most recipes call for specialty sugar and strange thickening agents…we’re not doing that here.)

Allow to cool and enjoy!!! If for whatever reason your jam is still too runny, reheat it on the stove to let the excess water burn off, but you should be good here!

This yields a small amount, perfect for weekend use on toast, scones, pancakes, waffles…all the carbs.
